Acidified foods: are foods that have a water activity greater than 0.85 but a pH less than or equal to 4.6.
The pH is a key factor in determining whether a food can produce botulinum toxin because botulinum toxin is usually not produced in environments with a pH below 4.6.

To prevent recurrence of food safety incidents, all canned food manufacturers are required to register as follows:

Food Business Registration (FFR): applicable to all canned food manufacturers.
Canned Food Manufacturer Registration (FCE): Specifically for manufacturers of low-acid or acidified food products, the FCE registration number is 5-digit, while the FFR registration number is 11-digit. A separate FCE registration is required for each manufacturing location.

In addition, the canning process must be documented and a product-specific process report number (SID) obtained. This means that each product (even if it is a different flavor, size, color or packaging) needs to have a separate SID number. If a product does not have the proper FCE registration and correct SID, then the low-acid or acidified canned food may be detained.
